It takes a quince tree four to eight years until it bears the first tasty fruits, which ripen at the end of October or beginning of November. Quinces are therefore considered the last fruits of the year in our climate zone. There is only one type of quince in the world; according to the shape of its fruit, it is only differentiated into apple and pear quince.

What are the differences between apple and pear quinces?
The main difference between apple and pear quinces is their appearance, pulp, taste and processing. Apple quinces are round, have hard flesh, an intense aroma and are suitable for compotes and jams. Pear quinces are elongated, have softer flesh, a milder aroma and are suitable for raw consumption and pastries.

The difference in varieties is also reflected in the use
Pear quinces are a tasty treat when eaten raw. As soon as you cut the fruit, the juice that comes out exudes a wonderful aroma. Because it is easier to cut, the pear quince is ideal for pastries such as tarts. It also works very well in fruit salads.
Apple quinces, on the other hand, are rather inedible raw because of their hard, woody flesh. However, these fruits can be wonderfully processed into compotes and jams. Thanks to the high pectin content, the jelly comes together easily and you can even use the peel.
Both varieties can be used to make schnapps and liqueurs, which taste extremely delicate thanks to the wonderful aroma of the fruit.
How are quinces stored?
Both apple and pear quinces are quite sensitive fruits that quickly become bruised and then spoil. Store this in a cool, airy place away from apples, pears and vegetables. The fruits should be placed next to each other and not touching each other. This way they stay fresh for one to two months.
Tip
Quinces are an excellent remedy for coughs. Their cores contain large amounts of mucous substances that form a protective coat over the irritated respiratory tract. You can put the kernels in a little water and bring them to the boil, which forms the so-called quince slime. Dried seeds can be sucked like cough drops. Please do not chew them as they taste very bitter and contain hydrogen cyanide.
