Renecludes are a subspecies of plums. They are characterized by the very aromatic fruits, which are ideal for eating fish. Unfortunately, they don't last long at room temperature. However, the noble plums can be easily boiled down in the form of jam or compote and preserved in this way.

How can you cook and preserve reindeer clods?

Cooking reneklodes is easy and allows the fruit to last longer. You can cook Renekloden as a compote in the oven or prepare it as jam. Both methods require clean jars and offer a delicious way to preserve these aromatic plums for many months.

Cooking reindeer compote in the oven

For this delicious compote, in addition to classic mason jars with a rubber ring, lid and metal clip or twist-off jars, all you need is your oven and a drip pan.

Ingredients

  • 1, 5 kg reindeer clods
  • 300 g sugar
  • 50 ml water
  • 2 vanilla beans
  • 2 tbsp almond syrup

Preparation

  1. Wash the reindeer clods thoroughly, cut them in half and remove the stones.
  2. Scrape out the pulp of the vanilla bean.
  3. Put the plums and all other ingredients in a large pot.
  4. Bring to the boil briefly and simmer for six minutes.
  5. During this time, preheat the oven to 180 degrees.
  6. Pour the Reneklodes into the previously sterilized jars. There should be a two centimeter wide edge at the top.
  7. Close tightly immediately.
  8. Place glasses in the drip pan of the oven and pour three centimeters of water.
  9. Slide into the bottom rail.
  10. Keep an eye on the compote. As soon as small bubbles appear in the glasses, switch off the pipe.
  11. Leave the preserves in the oven for another thirty minutes.
  12. Then take them out, let them cool down and check whether a vacuum has formed in all the glasses.
  13. Store in a cool, dark place.

The boiled compote can be kept for many months. Serve it with a dollop of cream as a dessert or as a fruity accompaniment to ice cream.

Cooking reindeer jam

Due to the added sugar, jam does not need to be additionally preserved. Provided you work very cleanly, the jam will last for many months.

Ingredients:

  • 1 kg reindeer clods
  • Juice of three lemons
  • 500 g preserving sugar 2:1

Preparation

  1. Wash the reindeer clods thoroughly, remove the stones and quarter them.
  2. Mix the fruits with the lemon juice and the preserving sugar in a large saucepan and bring to the boil.
  3. Cook for four minutes, stirring constantly.
  4. Scum if necessary.
  5. Do a jelly test. If this is successful, pour the jam into previously sterilized jars while it is boiling hot. Otherwise, continue cooking for one to two minutes.
  6. Wipe the edge of the glass clean and close the containers immediately.
  7. Turn over and let cool.
  8. Store in a cool, dark place.

Tip

When purchasing, make sure that the reindeer clods look firm and plump. The peel of the plums should be slightly shiny and the fruits should exude an aromatic, sweet scent.
