Renecludes are yellow, green or reddish fruits that are about the size of a plum. The fruit, named after Queen Reine Claude, impresses with its sweet, spicy aroma. Ripe plums exude a pleasant scent and give slightly when lightly pressed. Unfortunately, Reneclodes only last a few days at room temperature. However, they can be easily frozen and preserved in this way.

How do I freeze reindeer clods correctly?

To successfully freeze reindeer, you should wash, dry, halve and pit the fruit thoroughly. Then place the Reneclodes individually on a tray and freeze them for three hours. Then transfer the fruit to a container and freeze it again. This way they last six to nine months.

Preparation

Freeze only perfect plums with a firm, undamaged peel. Reindeer clods that are already very soft or even have rotten spots are no longer suitable for freezing.

  1. Wash the reindeer clods thoroughly.
  2. Dry the fruit.
  3. Halve the fruit and remove the stone with a knife.

Freezing Reneklodes

Now simply put the stone fruits in a freezer bag, they freeze together into a large lump and can hardly be removed in the desired quantity. That's why it makes sense to pre-freeze the fruits individually first.

  1. Place the reindeer clods next to each other on a tray. They shouldn't touch each other.
  2. Put the stone fruit in the freezer for three hours.
  3. Pour the plums into a suitable container and freeze the reindeer again.

Frozen, the fruits last for six to nine months.

How are the frozen reindeer clods thawed?

You can thaw the frozen fruit in the refrigerator overnight. It's quicker at room temperature. 300 g of reindeer clods need about five hours to thaw completely.

The fruits lose liquid during this process. Therefore, place the Reneclodes in a bowl in which the tasty juice can collect. You can eat the thawed stone fruit directly or use it like fresh fruit.

If you want to do it particularly quickly, you can defrost the frozen fruit in a water bath. Put the reindeer in a bowl and place it in a larger container with very warm water. Turn and stir occasionally to speed up the defrosting process.

Tip

Reneclodes are often confused with mirabelle plums. However, mirabelle plums contain slightly less acid, which is why they taste sweeter than plums. In Reneclodes, it is also harder to remove the stone from the pulp than in Mirabelle plums.
