Savoy cabbage varieties are divided into early, middle and late varieties. Early varieties include Famosa (harvest period: June-August) and Harbinger 3 (May-July). Medium varieties are Goldvital (July-October), Melissa (July-September), Produsa (July-October) and Samantha (June-November). Late varieties are Cantasa (October-February), Darsa (October-December), Marner Grüfewi (September-December), Smaragd (September-December), Vertus 2 (from September) and Winterfürst 2 (October-February).

Early, middle and late Savoy cabbage varieties
The difference between the individual varieties lies primarily in when the savoy cabbage is sown and harvested. Early Savoy cabbage varieties can be grown as early as February and planted outdoors in April. Late varieties, on the other hand, are sown in summer and can be harvested well into winter. Depending on the harvest time, it is also referred to as summer, autumn or winter savoy cabbage. The duration of cultivation also differs slightly depending on the variety: early varieties need around 13 to 26 weeks to develop, while late varieties need significantly longer at 26 to 40 weeks.
