How to can and preserve apricots?

To preserve apricots, you should prepare the fruit (blanch, peel, halve), pour into prepared jars, cover with a hot syrup and simmer for 20-30 minutes. This means the apricots will last for about a year.

How to properly preserve apricots

The delicate fruits spoil in a few days, even if refrigerated. If you have a large amount of stone fruits, it makes sense to boil the fruit. This method preserves the fruit for about a year.

  1. Prepare a syrup for the fruit, dissolve about 500 g of sugar in a liter of water and boil down a little.
  2. Blanch the apricots by placing them in boiling water for about two minutes.
  3. Take out the fruit and briefly soak it in ice water.
  4. Now you can skin, halve and core the apricots.
  5. Divide the apricot halves into bite-sized pieces.
  6. Immediately place the fruit pieces into the simmering syrup. This prevents the apricots from discoloring and allows them to cook gently.
  7. In the meantime, sterilize the jars. Use jars with screw lids or swing tops.
  8. Fill the apricots with syrup into the jars. Leave about an inch of space at the top.
  9. Close the jars and place them in a preserver without letting the jars touch each other. The cooking time depends on the manufacturer's instructions, but experience shows that it is around 20 to 30 minutes.
  10. Carefully take the glasses out of the kettle and cover them with a kitchen towel to cool.

  2. The apricots are washed, halved and pitted.
  3. Disinfect the mason jars you plan to use.
  4. Ply the apricot pieces as tightly as possible in the jars, but leave a free edge of at least 1 cm at the top.

  6. Shake the jar a little so that the syrup can spread everywhere. The upper free edge must remain as the contents expand when boiled down.
  7. Place the sealed jars in the preserving container. The cooking time depends on the appliance manufacturer's instructions.
  8. After the preserving time, cool the jars under a kitchen towel.
