How can I preserve zucchini?

To cook zucchini, you need 1 kg of zucchini, 400 ml of white wine vinegar, 400 ml of water, 500 g of sugar and 2.5 tsp of sea s alt. Cut the zucchini into slices, layer them in glasses and pour the cooked stock over them. Cook at 90 degrees for 30 minutes in an automatic preserver or in the oven at 180 degrees.

The necessary utensils

Vessels with glass lids, rubber rings and metal clips are suitable for preserving. You can also use twist-off jars with an intact seal.

The vegetables are preserved in an automatic canner or the oven.

Ingredients

  • 1 kg small zucchini
  • 400 ml white wine vinegar

Preparation

  1. Wash the zucchini, cut off the flower base and stem.

  7. Pour the broth over the top, leaving a two centimeter wide edge at the top.

Preserving

  1. Close the jars and place them on the rack of the canner so that they do not touch each other.
  2. Pour water until the containers are half submerged in the liquid.
  3. Soak at 90 degrees for thirty minutes.
  4. Remove with a glass lifter and allow to cool.
  5. Check whether a vacuum has formed in all glasses.
  6. Label, store in a cool and dark place.

  1. Place glasses in a drip pan and pour two centimeters of water.
  2. Push into the tube on the lowest rail.
  3. Set temperature to 180 degrees.
