Edible wild herb recipes such as dandelion salad with Camembert and Giersch spinach enrich the kitchen, provide valuable vitamins and are easy to prepare. When collecting wild herbs, make sure that they are away from roads and dog paths.
Dandelion salad with baked Camembert
This colorful salad covers almost the entire daily requirement of vitamin E and is a real vitamin C bomb.
Ingredients:
- 250 g young dandelion leaves
- 1 yellow and red pepper
- 2 spring onions
- 1 pack of breaded Camembert
Dressing:
- 4 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 1 tsp mustard
- Some redcurrant jelly or sugar
- S alt and pepper to taste
Preparation
- Wash the peppers, quarter them, remove the seeds and place them on a baking tray.
- Put in the oven on the top shelf and grill at the highest level for 5 to 10 minutes.
- Take out, let cool and peel off the skin.
- Cut peppers into fine strips.
- Wash, clean and cut the spring onions into rings.
- Wash and clean the dandelions very thoroughly, spin dry and cut off the lower third.
- Arrange on plates.
- Put the ingredients for the dressing in a tall mug and mix with the hand blender.
- Fry Camembert according to package instructions.
- Place the cheese on the salad and drizzle the dish with the dressing.
Giersch spinach
Giersch contains an extremely high amount of vitamin C
This weed causes many a hobby gardener to despair. The “spinach of the Middle Ages” is actually too good to simply end up in the compost heap. It contains at least four times as much vitamin C as a lemon and boosts the immune system with its valuable ingredients.
Ingredients:
- 500 g groundweed
- 1 shallot
- 1 garlic clove
- 100 ml cream
- 1 tbsp butter
- some flour
- S alt
- Pepper
- Nutmeg
Preparation
- Wash the gourd well and chop it roughly.
- Peel the onion and cut it into small cubes.
- Fry in the butter until translucent.
- Add the gourd and let it collapse.
- Sprinkle with flour and pour in the cream.
- Season with s alt, pepper and nutmeg.
