Kohlrabi and radish salad

The mild aroma of kohlrabi harmonizes wonderfully with the slight spiciness of radishes. This tasty salad is a special treat not only on hot summer days.

Ingredients for 4 people:

  • 2 medium-sized kohlrabi
  • 1 large bunch of radishes
  • 2 sweet and sour apples
  • 75 g whipped cream
  • 75 g natural yogurt
  • 3 tbsp lemon juice
  • S alt, pepper, sugar
  • Fresh herbs, such as dill, lemon balm, chives, parsley

Preparation:

  • Wash the kohlrabi, radishes and apples.
  • Peel the kohlrabi, quarter and core the apples.
  • Grate the ingredients coarsely and mix immediately with the lemon juice.
  • Whip the cream until semi-stiff and carefully fold in the yoghurt.
  • Season with s alt, pepper and sugar.
  • Pour the dressing into the salad and let it sit in the fridge for about half an hour.
  • Chop the herbs finely and sprinkle over the salad.

Kohlrabi schnitzel with yogurt sauce

Our breaded kohlrabi schnitzels prove that it doesn't always have to be meat. It's not just children who love the crispy fried vegetable cutlets, which go perfectly with young potatoes.

Ingredients for 4 people:

  • 2 medium-sized kohlrabi
  • 100 g breadcrumbs
  • 50 g flour
  • 2 eggs
  • 250 g natural yogurt
  • 1 box of cress
  • 2 tbsp lemon juice
  • 1 tsp honey
  • S alt and pepper
  • clarified butter

Preparation

  • Wash kohlrabi, peel and cut into slices about 1 centimeter thick.
  • Bring water to the boil in a large pot and add s alt.
  • Cook the kohlrabi slices for three minutes until al dente.
  • Meanwhile, cut the cress from the bed, wash it and make a dip with the yoghurt, honey, a little lemon juice, s alt and pepper.
  • Drain the kohlrabi and immediately rinse with cold water.
  • Pat dry with kitchen paper.
  • Prepare the breading line: Mix the flour with s alt and pepper in a deep plate, beat the eggs in a second plate, pour the breadcrumbs into a third plate.
  • Melt the clarified butter in two pans.
  • First turn the kohlrabi slices in flour, then dip them in the eggs and finally roll them in the breadcrumbs. Press the breading firmly.
  • Fry in the pan until golden brown on both sides.

Tip

The fiber contained in kohlrabi ensures regulated digestion. However, the vegetable does not have a flatulent effect like many other types of cabbage and is therefore well tolerated by sensitive people.
