Delicate arugula soup: Vegetable broth-based soup with potatoes, arugula, cream and sour cream, served with fresh baguette.

Potato salad with feta and rocket

This salad goes perfectly with briefly fried meat or grilled food.

Ingredients for 4 servings

  • 750 g waxy potatoes
  • 250 g Feta
  • 200 g rocket
  • 2 onions
  • 5 tbsp olive oil
  • 3 tbsp wine vinegar
  • 1 tsp mustard
  • S alt and pepper to taste

Preparation

  • Wash the potatoes and cook until soft.
  • Let it evaporate briefly and peel.
  • Press through a jacket potato harp or cut into thin slices.
  • Wash the rocket, spin dry and cut off the stems. Tear into bite-sized pieces.
  • Peel the onions and cut into fine rings.
  • Dice feta.
  • Whisk olive oil, vinegar, mustard, s alt and pepper to make a marinade.
  • Mix with the potatoes.
  • Carefully fold in the sheep cheese, onions and rocket.

Fine rocket soup

Serve this soup with fresh baguette, which pleasantly underlines the spicy aroma.

Ingredients for 4 people:

  • 200 g floury potatoes
  • 350 g rocket
  • 1 onion
  • 1 garlic clove
  • 1 tbsp sunflower oil
  • 800 ml vegetable broth
  • 200 ml whipped cream
  • S alt and pepper
  • 2 tbsp sour cream

Preparation

  • Wash the potatoes, peel them and cut them into small cubes.
  • Peel and dice the onion.
  • Peel the garlic.
  • Sauté the onion in the oil until translucent, press the garlic through the press and add.
  • Add the potato cubes and deglaze everything with the vegetable broth.
  • Simmer gently for about 15 minutes.
  • During this time, wash the rocket, cut off the hard stems and roughly chop two thirds of the leaves.
  • Put these into the soup towards the end of the cooking time and let it steep briefly.
  • Puree everything finely with a hand blender.
  • Add cream and season the soup with s alt and pepper.
  • Let it thicken a little if necessary.
  • Arrange in plates, add a dollop of sour cream on top and decorate with the remaining rocket leaves.

Tip

Rucola can also be used on its own to make a salad. Wash the leaves, remove the stems and tear the greens into bite-sized pieces. Dress this with vinegar, walnut oil, s alt and pepper and sprinkle the rocket salad with toasted pine nuts.
