Chinese cabbage scores with its pleasant aroma and is easier to digest than many other types of cabbage. Whether sliced in a salad, cooked as a side dish or as a crunchy finger food with a dip for a little hunger in between: Chinese cabbage can be used in a variety of ways. However, before consumption, the cabbage must be washed thoroughly to remove any remaining dirt and pesticides.
How do you wash Chinese cabbage properly?
To wash Chinese cabbage, first remove the wilted outer leaves and rinse the entire head under running water. Then cut out the stalk, cut the cabbage into strips or loosen the leaves and wash them again briefly under running water.
Cleaning and washing Chinese cabbage
- First break off the wilted outer leaves.
- Rinse the whole Chinese cabbage briefly under running water.
- Shake off and pat dry a little.
- Depending on how you plan to use it, halve or quarter the Chinese cabbage.
- The stalk is relatively hard. So cut it out.
- If some of the leaf ends are unsightly, pluck them off.
- Cut the Chinese cabbage crosswise into narrow strips or separate the leaves from each other.
- Towards the lower end the meat becomes more and more firm. The leaf veins of Chinese cabbage can be eaten without hesitation.
- Wash again briefly under running water.
Good quality Chinese cabbage: How do you recognize it?
The head of the cabbage should be closed and feel firm. Make sure that the leaves are crisp and have no dark spots.
If stored too warm, the Chinese cabbage gets small, black spots. It is still edible, but no longer tastes as aromatic. It is better to leave heads with rotten spots that have already withered.
Chinese cabbage is one of the most tender types of cabbage, so you should process it quickly. If this is not possible, wrap it in a damp tea towel and place the head in the vegetable drawer of the refrigerator. It stays here for four to six days.
Tip
If the head of cabbage is too large to be eaten immediately, you can freeze Chinese cabbage. Blanch the cut leaves briefly in boiling s alted water and then rinse them with very cold water. Then place the cabbage in ice cube trays and place in the freezer. This makes it easy to portion.
