Make juice with the juicer
This method is gentler because more of the valuable ingredients in the currants are retained. Water is poured into the lower part of the device and the berries are placed in a sieve insert above. The water is heated and steam rises, which dissolves the liquid from the berries. In order for the juice obtained in this way to last, you must additionally boil it down.
Pasteurize blackcurrant juice
Mix the juice with 250 - 500 g of sugar per kilo of berries and stir until the crystals have dissolved. Then pour into sterilized juice bottles.
- Place the opened bottles in a roasting pan and add about three centimeters of water.
- Boil in the oven at 75 degrees for 20 minutes.
- Close immediately.
Tip
Currant juice freezes well. This makes sense if you want to prevent valuable ingredients from being destroyed by the heating required for sterilization. Even if you want to avoid sugar, you can use this method of preserving blackcurrant juice.
