Peach jam is a treat that not only children enjoy. Desserts or morning muesli can be refined with the wonderfully aromatic puree. It is suitable as a fruity cake ingredient and gives savory dishes a special touch. When boiled down, peach jam lasts for many months and you can always rely on a portion of “flavored summer from the jar”.
How can you properly preserve peach jam?
To make peach jam, peel 2 kg of ripe peaches, cut them in half and remove the stones. Cook the peaches with water, lemon juice and vanilla pod until soft, puree the puree and fill it into sterilized jars. Preserving is done in the preserving machine at 90 degrees for 30 minutes or in the oven at 180 degrees.
Ingredients for the peach puree
- 2 kg fully ripe peaches
- 1 lemon, just the juice
- 300 ml water
- 1 vanilla bean
If you like, you can sweeten the peach puree with a little sugar or honey.
To cook you need:
- Twist-off jars or mason jars with lids, rubber ring and metal clip
- Filling funnel
- Canning machines
Alternatively, you can preserve the peach puree in the oven.
Preparation
Skinning peaches
Since the peach peel cannot be easily passed through, the fruits are first skinned:
- Pour water into a large pot.
- Boil.
- Blanch the peaches for three minutes.
- Now you can peel off the peel with a kitchen knife.
Now sterilize the glasses in boiling water for 10 minutes and let them cool upside down on a tea towel.
Making jam
- Cut the fruit in half and take out the stone.
- Put the peaches in a pot with the water and lemon juice.
- Scrape out the vanilla pod.
- Add the pod and pulp to the peaches.
- Bring to the boil and simmer gently for 20 minutes.
- Take out the vanilla pod and puree the hot puree with the hand blender.
- Now taste the peach puree. If it's not sweet enough for you, you can add some sugar or honey.
- Heat briefly again.
- Immediately pour into the sterilized jars using the funnel. There must be a margin at least one centimeter wide at the top.
- Wipe the edge clean and close.
Cooking the peach puree
- Place the jars on the rack of the canner.
- Pour water so that three quarters of the containers are in the liquid.
- Cook for 30 minutes at 90 degrees.
If you want to preserve the peach puree in the oven, follow these steps:
- Place glasses in the drip pan; they must not touch each other.
- Pour three centimeters of water.
- Push into the tube on the bottom rail.
- Switch the oven to 180 degrees top and bottom heat.
- As soon as the water in the drip pan begins to simmer, turn it off and leave the glasses in the oven for another 30 minutes.
Tip
It tastes very tasty if you enrich the peach puree with two to three ripe bananas. Since the fruits are very sweet, you can usually do without added sugar.
