If you love cucumber salad, then you should make the effort to preserve cucumbers yourself at cucumber harvest time. Snake cucumbers can be canned as a ready-made cucumber salad.

How to can cucumber salad?

To make cucumber salad you need about 2 kg of cucumbers, s alt, fresh dill, 1/4 l of mild balsamic vinegar and 250 g of sugar. Cut the cucumbers into slices, add s alt and let them steep. Prepare a decoction of water, vinegar, sugar and s alt. Sterilize jars, pour in cucumbers and dill and cover with hot broth. Then cook for 30 minutes at 85 degrees in an automatic preserver or 100 degrees in a preheated oven.

In the winter months, when snake cucumbers are often really expensive, it's nice to use a supply of cucumber salad. The cucumber slices are ready to eat and only need to be seasoned with oil and pepper. If you want to preserve six jars of cucumber salad, you will need:

  • about two kilos of cucumbers
  • S alt
  • fresh dill
  • 1/4 l vinegar of your choice, preferably a mild balsamic vinegar
  • 250 g sugar
  • First prepare the glasses. Sterilize jars, lids and rubber rings in boiling water.
  • Drain the glasses on a clean tea towel.
  • Wash the cucumbers.
  • For cucumbers from your own garden and organic cucumbers, the peel can be left on.
  • Cut the cucumbers into slices using a slicer.
  • Put the slices in a sieve and sprinkle with s alt.
  • Let the cucumbers sit for half an hour to an hour so that the excess water can drain out. This means that the cucumbers remain al dente when boiled.
  • In the meantime, cook the stock of water, vinegar, sugar and s alt. Do not add pepper to the stock, the cucumbers would be too spicy. Nevertheless, taste the broth.
  • Rinse the cucumbers again under running water and let them drain.
  • Now put the cucumber slices in clean jars.
  • Wash the dill, chop it and place it on the cucumbers.
  • Fill the hot broth into the cucumber jars up to just below the rim. The cucumbers should be completely covered with the liquid.
  • Close the jars and cook them in the canner at 85 degrees for 30 minutes. You can also cook your glasses in the preheated oven at 100 degrees for 30 minutes.
  • If you want to prepare the cucumber salad, put the cucumbers in a bowl, add a little oil and season with pepper.
