Cucumber cream vegetables
This vegetable goes wonderfully with briefly fried meat or vegetarian patties.
Ingredients
- 2 fresh snake cucumbers
- 1 onion
- 100 ml vegetable broth
- 150 g sour cream
- 15 g butter
- 1 tsp flour
- 1 bunch of fresh or 2 teaspoons dried dill
- S alt and pepper to taste
Preparation
- Wash the cucumbers thoroughly and peel as desired.
- Halve.
- Take out the core with a spoon.
- Cut the cucumber halves into bite-sized pieces.
- Peel the onion and dice finely.
- Melt the butter in a saucepan.
- Sauté the onion until translucent.
- Add the cucumber pieces and sauté briefly.
- Fill with broth, fold in dill.
- Bring to the boil briefly, reduce the heat and let the cucumbers simmer for about five minutes. They should still be al dente.
- Stir flour into the sour cream.
- Mix with the cucumbers and let them cook briefly.
Cucumber ice cream
Admittedly: ice cream made from cucumbers sounds pretty unusual at first. But once you've tried our recipe, you won't want to be without this cool refreshment on hot days.
Ingredients
- 1 small, pureed snake cucumber
- 150 g sugar
- 2, 5 g locust bean gum
- 200 ml milk
- 150 ml cream
- 2 tbsp inulin
- 10 chopped mint leaves
For the vegan version, replace the milk with coconut milk and the cream with a vegan alternative of your choice.
Preparation
- Mix the dry ingredients together thoroughly.
- Add the pureed cucumber and milk and stir until smooth.
- Whip the cream until stiff and carefully fold it into the mixture.
You can either make the ice cream in the ice cream maker or simply put it in the freezer and stir every hour.
Cucumber Relish
Ingredients
- 4 cucumbers
- 3 onions
- 1, 5 cm ginger
- 150 ml white wine vinegar
- 150 g sugar
- 3 tbsp mustard seeds
- 1 bunch of fresh or 2 teaspoons dried dill
- 0, 5 tsp turmeric, ground
- 1 tsp s alt
- ½ tsp pepper
Some small, previously sterilized jars with the twist-off cap intact.
Preparation
- Peel the cucumbers, scoop out the seeds with a spoon.
- Cut into very fine cubes.
- Peel the onion and ginger. Hoes.
- Put the cucumber with the onion and ginger in a saucepan.
- Fix vinegar, sugar, mustard seeds, s alt, pepper and turmeric.
- Simmer over medium heat for ten minutes.
- Wash, clean, pat dry and finely chop the dill.
- Take the relish off the heat and fold in the dill.
- Immediately fill into the sterile jars.
- Close, turn upside down and let cool.
Tip
Relish is a seasoning sauce that is often used in Indian and English cuisine. It is made from vegetables or fruit and aromatic spices and goes well with fried meat or fish, sandwiches or papadum.
