The harvest time for savoy cabbage varies depending on the variety: early varieties are ready to harvest from May or June, medium varieties from June or July and late varieties from September or October until winter. Winter savoy cabbage can even be harvested until February.

Early, middle and late Savoy cabbage varieties

Savoy cabbage is divided into three categories, which say a lot about the harvest time:

  • Early varieties: Are sown from early/mid-March to April and can be harvested from May or June
  • Medium varieties: Are sown from the end of March and harvested from June or July.
  • Late varieties: Are planted from March to May and harvested from September or October, often well into winter.

This is where winter savoy cabbage comes into play: Not only can late savoy cabbage often be harvested into February, there are also varieties that are not planted until October and are therefore ready to harvest in March. Ask your specialist retailer for the appropriate seeds!

Tip

Sow your savoy cabbage at the specified times to prevent it from flowering. If it is still starting to develop flowers, harvest it as quickly as possible because the flower development will cause it to lose its taste.
