Autumn and winter are nut season. After they have been dried for about four to six weeks, the nuts can be eaten and can therefore be found in almost every Santa Claus package. Walnuts can also be used in a variety of ways in the kitchen. Our Engadine nut cake tastes wonderful with Advent coffee and young and old will love the homemade walnuts.

Try these simple recipes with walnuts: Candied walnuts, ideal as a snack or as a gift, and an Engadine nut cake, perfect for Advent coffee or festive occasions. Both recipes are easy to prepare and taste delicious.
Candied walnuts
Ingredients:
400 g sugar
2 packets of real vanilla sugar
200 g walnut kernels
125 ml waterA sheet of wrapping paper
Preparation
- Mix sugar, vanilla sugar and water in a pan.
- At maximum heat, stirring constantly, bring to the boil
- Add the nuts to the simmering mixture, reduce the heat.
- Continue stirring until the caramel has coated the nuts and has reached a medium brown tone.
- Pour the walnuts onto the baking paper and pull apart with two forks.
- Be sure to let it cool before eating, the nuts are very hot.
Engadine nut cake
Ingredients:
Dough
500 g flour
300 cold butter, cut into pieces
200 g sugar
2 eggs1 pinch of s alt.
Filling
400 g coarsely chopped walnuts
200 g sugar
200 ml cream2 tbsp honey
For brushing
1 egg yolkcinnamon
Preparation
- Make a shortcrust pastry from the dough ingredients and keep it cold.
- During this time, grease a springform or tart pan or line it with baking paper.
- Line the bottom and sides with a little more than half of the dough.
- Roll out the remaining dough and cut out cookies, for example in the shape of a fir tree or star. Alternatively, you can place the dough as a plate on top of the filling.
- Caramelize the sugar in a pan, add the walnuts and deglaze with cream.
- Spread the mixture quickly onto the prepared base and immediately cover it with the slightly overlapping cookies or the dough sheet.
- Brush with egg yolk and dust with cinnamon.
Bake at 180 degrees for about 40 minutes (stick test).
The cake will keep for several weeks if stored in a cool and dry place.
Tip
Cracking fresh walnuts is a lot of work. On the other hand, the nuts without a protective shell, provided they are stored in a cool, dry place in a tightly sealed container, will only last for about four weeks. However, walnuts can be frozen in an airtight container and used like fresh nuts for up to a year.
