Mushrooms are available in the supermarket all year round, but you can't always use them fresh. The mushrooms will last for about four days in the vegetable compartment of the refrigerator or cleaned and cut in the freezer. However, if they are not refrigerated, they have to be used up after just one day. However, there are some creative ways to make fresh mushrooms last longer.

How to preserve mushrooms?

Preserving mushrooms can be done by freezing, drying, preserving or preserving them in oil. Frozen at minus 18 °C, they stay fresh for around six to ten months, while dried, pickled or stored in oil they last for several months.

The options for preserving are extremely numerous: raw mushrooms, for example, can be frozen or dried, for example in a dehydrator. Mushrooms can also be easily boiled in a vinegar broth, preserved or preserved in oil.

Freeze fresh mushrooms

Young, raw and fresh mushrooms are ideal for freezing and will last for around six to ten months in the freezer at minus 18 °C. Clean the mushrooms carefully and remove pressure marks and other damaged areas. Then cut them into slices or coarse pieces and pack them in small quantities in freezer bags or freezer containers. Freezing should be done as quickly as possible. Blanching beforehand is not recommended.

Drying mushrooms

Clean the mushrooms intended for drying carefully (but not with water!) and then cut them lengthwise into slices about two to three millimeters thick. These can be dried very well in special automatic dehydrators or, if one is not available, in the oven at a maximum of 70 °C with the oven door slightly open. You can also air dry the mushrooms: thread the mushroom slices on a string or place them on a clean cloth. Now keep them in a warm, airy place. You should always check whether the food being dried is spoiling due to a lack of ventilation or heat. Dried mushrooms break when bent and have a paper-like feel.

Tip

Clean young, fresh mushrooms and cut them into coarse pieces. Then steam them in hot fat for about 20 minutes, season them as desired and add a little water. The mushrooms and their juice are placed hot in preheated mason jars and sealed with rubber and lids. The jars must then be sterilized in a water bath at 95°C for 60 minutes. Let them cool slowly and check whether the jars are sealed really well.
