The small yellow fruits only last a few days after picking. If you have a large harvest, it is worth preserving mirabelle plums. You can boil the fruit, make compote or preserve jam.
How can you preserve mirabelle plums?
To preserve mirabelle plums, they can be preserved, boiled or made into compote or jam. To preserve them, the mirabelle plums are deseeded, stacked in sterilized jars and poured with hot sugar water before they are heated in an automatic preserver or oven.
Important information about mirabelle plums
The small yellow fruits ripen from July to September. They are related to plums and are also called “yellow plums”. Since mirabelle plums spoil quickly, they should be consumed or processed quickly. You can combine various spices wonderfully with the sweet aroma of mirabelle plums. Try it with vanilla pods, cinnamon sticks, cardamom pods, but also with ginger, star anise or lavender.
Waking mirabelle plums
- Wash the mirabelle plums under running water.
- Sterilize mason jars, lids and rubbers. The washed glasses can be dried in the oven at 120 degrees for 10 minutes. Cook the rubbers in the pot for 10 minutes.
- Halve the fruit and remove the core. In doing so, you sort out damaged fruit.
- Put the fruit in the glasses.
- Prepare a sugar solution to infuse. 1 liter of water and 500 g of sugar are enough for about three glasses.
- Boil water and sugar.
- Pour the hot broth over the fruit until it is covered. The fruits that stick out of the brew turn brown after a while and no longer look nice.
- Close the jars with screw caps or rubber rings and jar lids and clips.
- Place the jars in the preserving machine and pour in enough water until the jars are half submerged in water.
- Cook in the oven, place the glasses in the drip pan and add about 2 cm of water.
The mirabelle plums are cooked in the preserving machine for 30 minutes at 90 degrees and in the oven for half an hour at 100 degrees. Once the cooking time is over, the jars remain in the pot or oven for some time and cool then completely under a tea towel. Preserved mirabelle plums can be kept for several months. It may happen that a jar remains open while preserving. The contents are best consumed immediately or frozen. If a jar opens after a long time, the contents are spoiled and should be thrown away.
