Local asparagus is available in stores only for a few weeks in spring. If you would like to stock up for summer, autumn and winter, you can cook a few jars of the delicious vegetables.
How can I preserve asparagus?
Canning asparagus is achieved by peeling, washing and cooking the asparagus, preserving it in mason jars with lightly s alted asparagus broth, adding spices (optional) and preserving it in the canner or oven. After cooling, the glasses can be stored.
Very easy: preserving asparagus
You should use 1 liter mason jars to preserve asparagus. The glasses are so high that the asparagus can be stored upright. Jars and lids are boiled before use or sterilized in the oven for ten minutes at 100 degrees.
- Peel the fresh asparagus with a peeler.
- Wash the asparagus spears and cut off the dry end.
- Put the bars in lightly s alted water for about an hour.
- Then cook the asparagus in it for 10 to 15 minutes.
- Cut the bars to a length that will fit in the jars.
- Place the asparagus spears upright, head upwards, in the jars.
- Pour the lightly s alted asparagus broth into the glasses while it is still hot.
- If you have small pieces of asparagus, put them in suitable glasses and fill with stock.
- If you want, you can also add spices, such as tarragon.
- Dry the edge of the glass again with a clean cloth.
- Close the jars with a rubber seal, glass lid and preserving clips.
Now put your jars in the oven or in the canner.

Place the glasses in the kettle at a distance, pour water up to half of the glasses and cook at 99 degrees for an hour.
In the oven
In the oven, use the drip pan, place the glasses in it and add 2 cm of water. Heat the oven to 200 degrees. As soon as pearls appear in the jars, turn off the oven and leave the jars in it for another 30 minutes.
The jars cool down in the oven/preserver for some time, but are then taken out to cool completely under a cloth. The canning clips can then be removed.
If you want to be absolutely sure that your canned asparagus stays fresh until the next harvest, you can boil the jars for another hour after 48 hours.
