Try out two delicious beetroot recipes: tarte flambée with beetroot and goat cheese, which is refined with honey and thyme, or a beetroot spread with chickpeas, sesame butter and coriander, which goes perfectly with fresh farmhouse bread.

Ingredients

250 g cooked beetroot

150 g goat cheese

100 g sour cream

1 onion cut into rings

1 pack of ready-made tarte flambée dough

30 g walnuts

Preparation

  • Preheat oven to 200 degrees
  • Roll out the tarte flambée dough and place it on a baking tray
  • Spread the sour cream evenly on top.
  • Cut the beetroot into cubes or thin slices and spread on the dough. Wear gloves when carrying out this work.
  • Place onion rings on top.
  • Mash the goat cheese with a fork and sprinkle on the tarte flambée.
  • Season with s alt, pepper and thyme.

Bake for about 15 to 20 minutes, until the edge of the dough is golden brown.

Beetroot spread with chickpeas

This spread tastes wonderful with fresh farmhouse bread. Once prepared, it lasts for about four days in the fridge - although we always eat it up much quicker.

100 g canned chickpeas

1 tbsp sesame butter

10 coriander leaves

  • Peel the beetroot and cut into pieces (wear gloves).
  • Put into a blender with the chickpeas, sesame butter and spices.
  • Mixing. If the mixture is too thick, you can add a little oil or water.

Tip

Beetroot from your own garden can be stored for up to five months. Harvest the vegetables before the first frost threatens and be careful not to damage the tubers. Line a wooden box with foil and fill it with moistened sand. Then put the beetroot inside and fill with sand. Place the box in a frost-free room, such as the garden shed or a cool basement.
