Cream soup with lamb's lettuce
Ingredients for 4 servings
- 2 shallots
- 2 garlic cloves
- 200 g cleaned lamb's lettuce
- 150 g potato cut into small cubes
- 60 g bacon cubes
- 100 ml cream
- 1 tbsp butter
- 600 ml water
- 1 cube of vegetable broth
- depending on taste, about ½ teaspoon of s alt
- 2 pinches of pepper
- 1 pinch of sugar
- some lemon juice
- 1 splash of Worcestershire sauce
Preparation
- Dice shallots
- Chop garlic finely
- Put the butter in a pot, let it melt, sauté the onions and garlic.
- Deglaze with water.
- Dissolve the stock cubes in it.
- Add the potato cubes and simmer gently for about 10 minutes.
- In the meantime, fry the bacon in a pan until crispy.
- Add lamb's lettuce to the soup and cook for two to three minutes.
- Puree with the hand blender and season with the spices.
- Pour soup into cups, sprinkle bacon cubes on top as a topping.
Lamb salad with potato dressing
Ingredients for 2 servings
- 200 g lamb's lettuce
- 4 firm tomatoes
For the dressing:
- 100 g potatoes
- 200 ml vegetable broth
- 2 spring onions
- 1 level teaspoon mustard
- 1 – 2 tbsp vinegar
- S alt and pepper to taste
Preparation
- Wash the potatoes, peel them, cut them into cubes and cook them in the vegetable broth until soft.
- Wash lamb's lettuce and tomatoes. Cut tomatoes into bite-sized pieces.
- Wash the spring onions and cut into fine rings.
- Pour cooked, slightly cooled potatoes with about 2/3 of the cooking liquid into a tall container.
- Add spices and chop with a hand blender.
- Mix the dressing and onions with the lamb's lettuce.

If you are a fan of potato salad, you can give the dish an interesting touch with fresh lamb's lettuce. However, only fold in the salad shortly before serving so that it stays nice and crunchy.
