When boiling, cauliflower layered in jars is preserved using heat. This is not only worthwhile for garden fans with their own vegetable patch. In the season from April to October, the delicious vegetables are significantly cheaper and also taste more aromatic.
How to preserve cauliflower?
To cook cauliflower, you need 1 kg of cauliflower, water, balsamic vinegar, sugar, s alt, spices and citric acid. Blanch the cauliflower in citric acid water, layer it in jars and pour the spice liquid over it. Cook in a preserving pot at 100 degrees for 90 minutes and then allow to cool.
Before canning: sterilize jars
Jars with a glass lid, rubber ring and clip are just as suitable for preserving as twist-off jars or jars with a rubber ring and clip closure. Make sure that the containers and rubbers are undamaged. It is also important that you carefully disinfect all containers.
- To do this, take a large pot and fill it with water.
- Put in jars, rubber rings and lids.
- Bring the water to the boil and leave the containers in it for some time.
- Take everything out with tongs and let it dry on a clean tea towel.
Recipe for sweet and sour cabbage florets
Ingredients for 3 – 4 glasses of 500 ml each:
- 1 kg cauliflower
- 500 ml water
- 250 ml white balsamic vinegar
- 250 g sugar
- 50 g s alt
- 1 tbsp mustard seeds
- 3 garlic cloves
- 2 bay leaves
- 1 g citric acid
Preparation
- Wash the cauliflower, cut out the stalks and divide into small florets.
- Fill a large pot with water, add the citric acid and bring to the boil briefly. Blanching with this antioxidant keeps the cauliflower nice and white.
- Drain and layer tightly in mason jars. There should be about two centimeters of space left at the top.
- Boil water with balsamic vinegar, sugar and spices.
- Pour hot liquid over the cauliflower. Use a spoon handle to loosen any bubbles in the glass.
- Wipe the edge of the glass, put on the rubber ring and lid and put the clip on.
- Place on a rack in the preserving pot. Pour in enough water so that three quarters of the glasses are in the water bath.
- Cook at 100 degrees for 90 minutes.
- Allow the glasses to cool, remove the clamps.
Tip
