Unfortunately, freshly extracted juices do not last long and spoil in the air. Anything you cannot drink within a few days must therefore be preserved. So you still have something from the great summer harvest even in winter.
How to preserve juice?
Juice can be preserved by heating and filling in sterilized bottles, preserving in an automatic canner or freezing in screw-top jars. Store in a cool, dark place for maximum shelf life.
Preserving juice without a juicer
- Heat the finished juice to 72 degrees and maintain this temperature for twenty minutes.
- If desired, you can add sugar to the juice. Stir until all crystals have dissolved.
- Meanwhile, sterilize glass bottles and lids in boiling water for ten minutes. To prevent the vessels from bursting, you should heat everything at the same time.
- Fill juice into the wrong places using a funnel. There should be a three centimeter wide border at the top.
- Immediately screw on the lid and turn the containers over.
- Let cool at room temperature.
- Check that all lids are firmly on, label them, store in a cool, dark place.
Preserving juice from the steam juicer
If you make juice with the steam juicer, you can save yourself the additional heating:
- Immediately fill the juice obtained into sterilized bottles, close them and turn the containers upside down.
- After 5 minutes, turn over and let cool at room temperature.
- Check that all lids are tight, label them and store in a cool, dark place.
The juice will last for a few months. If you want it to last even longer, you can also preserve the juice.
Cooking juice
- Place the bottles, filled up to three centimeters below the rim and closed with a lid, on the rack of the canner.
- Pour enough water so that half of the containers are submerged in the liquid. Can at 75 degrees for half an hour.
- Remove the bottles and let them cool at room temperature.
- Check that all lids are firmly on, label them and store in a cool, dark place.
Preserve juice by freezing
Cold-pressed juice contains the most vitamins. To preserve it without loss, you can simply freeze it.
- Pour the juice into well-washed screw-top jars.
- These should only be filled three quarters as the liquid expands when it freezes.
- Put these in the freezer.
Tip
You can also fill freshly squeezed juices into ice cube trays and freeze them. If necessary, the cubes can be easily removed individually. Add these to mineral water and you will get a very aromatic and he althy spritzer.
