Spinach, like many other vegetables, can be preserved for a long time by preserving it. Only a few basic ingredients are necessary and the effort is kept to a manageable level.

How can I cook and preserve spinach?

Canning spinach can be done in an automatic canner or in the oven. Wash the spinach beforehand, chop it up and put it in sterilized jars. In the preserving machine: Cook at 98 degrees for 90-110 minutes. In the oven: cook at 180 degrees top and bottom heat until bubbles appear and then let it sit for another 40 minutes.

The necessary utensils

First you need mason jars with a glass lid and rubber ring or twist-off jars with an intact seal. Preserving food in an automatic preserving machine is very uncomplicated. If you don't have such an appliance, you can also bake the spinach in the oven.

Jars and lids must be thoroughly rinsed and sterilized in boiling water for ten minutes before canning.

Ingredients

  • 1 kg spinach
  • S alt and nutmeg as desired

Cooking spinach

  1. Wash the spinach carefully, cut off the tough stems and spin the vegetables thoroughly dry.
  2. Put a few tablespoons of water in a pot and let the spinach wilt in it. Season with a little nutmeg and s alt.
  3. Crush with the blender. If you prefer slightly coarser spinach, you can also chop the cooled leaves finely.
  4. Put the vegetables into the prepared containers.

Canning in the canning machine

  1. Place the jars on the rack of the pot and pour enough water so that at least two thirds of the jars are submerged in the liquid.
  2. Cook at 98 degrees for 90 to 110 minutes. The exact time depends on which canner you use.
  3. Remove with tongs and let cool.
  4. Check whether a vacuum has formed in all glasses.
  5. Label, store in a cool and dark place.

Preserving in the oven

  1. Place the glasses in the drip pan and add one to two centimeters of water.
  2. Push into the tube and set the oven to 180 degrees top and bottom heat.
  3. As soon as the water in the drip pan begins to boil and small bubbles appear in the jars, switch it off and leave the preserved food in the oven for another 40 minutes.
  4. Remove and after cooling check whether a vacuum has formed.
  5. Label, store in a cool and dark place.

Tip

Spinach also freezes very well. To do this, briefly blanch the leaves, spin them dry and freeze the vegetables in freezer containers.
