White cabbage cannot only be preserved in the form of sauerkraut. Cooked white cabbage is the basis for many delicious recipes, but can also be made into salad. Canning is also relatively quick and easy.
How to preserve white cabbage?
Preserving white cabbage is easy: Slice the cabbage into strips, mix with onions and spices, fill into jars and cook either in the automatic preserver at 98 degrees for 90 minutes or in the oven at 180 degrees. Then store in a cool, dark place.
Users needed
In addition to the oven with a drip pan or a preserving machine, you need suitable glasses:
- Classic mason jars with glass lid, rubber ring and metal clip.
- Vessels with twist-off lids. If you want to reuse used glasses, make sure that the seal is intact.
You can also use jars with lids, rubber rings and metal brackets. However, these have the disadvantage that the vacuum cannot be checked reliably.
Ingredients
- 1 large white cabbage
- 500 g onion
- 500 ml white wine vinegar
- 250 ml rapeseed oil
- S alt, pepper, caraway and sugar to taste
Preparation
- Cut out the stink of the white cabbage.
- Plane into strips.
- Peel the onions, halve them and cut them into strips.
- Put the white cabbage, onion and spices in a large bowl and knead vigorously. The cabbage must feel soft and juice must flow out.
- Taste again.
- Fill the vegetables into the glasses. There should be a two centimeter wide border at the top.
- Put the lid on.
Canning in the vending machine
- Place the jars on the rack of the canner. They are not allowed to touch each other.
- Pour water until the containers are at least half full.
- Can at 98 degrees for 90 minutes.
- Remove with the glass lifter, place on a cloth and let cool.
- Check whether a vacuum has formed in all glasses.
- Label, store in a cool and dark place.
Preserving in the oven
- Place the food in the drip pan and add 2 centimeters of water.
- Push into the tube on the bottom rail, heat to 180 degrees.
- As soon as small bubbles appear in the jars, switch them off and leave the white cabbage in the oven for another 30 minutes.
- Take out and let cool on a cloth.
- Check whether a vacuum has formed in all vessels.
- Label, store in a cool and dark place.
Tip
By boiling down, the cabbage is already cooked and only needs to be warmed up briefly and seasoned before consumption.
