The apricot harvest time is in mid-summer, usually from mid-July to mid-August, depending on the apricot variety, flowering time and location conditions. Apricots are ready to harvest when they are rich yellow to orange-yellow and appear soft.

The apricot harvest time isin mid-summer from mid-July to mid-August. Depending on the flowering time, apricot variety and local site conditions, there may be slight deviations in timing:
- Early flowering apricot varieties ('Mombacher Early Apricot'): Harvest from the beginning of July.
- Medium-late flowering apricot varieties ('Hungarian Best'): harvest from mid-July.
- Late-flowering apricot varieties ('Bergeron'): Harvest time from the beginning of August to the end of August.
- Apricot cultivation in the greenhouse or on the trellis on the south wall: harvest possible from the beginning of July.
When are apricots ready to harvest?
Apricots (Prunus armeniaca) are ready to harvest when the peel turnssaturated yellowto a deep orange-yellow and red cheeks appear on the sunny side of the fruit. A pressure test dispels any remaining doubts about whether it is ready for consumption. Gently press the apricot with your finger. If the peel gives way and theflesh feels soft, the harvest time can begin.

Apricots from our own harvest continue to ripen
As soon as you harvest an apricot, the fruit finishes its ripening process. There is still hope for apricots with inedible hard flesh. Marginal ripening occurs within two to three days after harvest. Simply wrap a hard apricot with a ripe peach or apple in newspaper. The escaping ripening gas ethylene intensifies the ripening of the apricot. The trick doesn't work with apricots from the supermarket.
