When and how should you harvest bok choy?

To harvest Pak Choi, wait until the plant is 20-50 cm tall depending on the variety and about 8-10 weeks after sowing. Harvest before the plant produces flowers by carefully turning it and its roots out of the soil. The harvested pak choi stays fresh in the refrigerator for about 7-10 days.

The right time to harvest Pak Choi

Pak Choi should not be harvested too late, otherwise it will produce flowers and the leaves will become fibrous. There are various guidelines to find the right harvest time:

  • Pak Choi grows to a size of 20 to 50cm depending on the variety. You can find out the maximum size of your Pak Choi on the seed package. Once it has reached the height mentioned, you can harvest it.
  • Pak Choi is usually harvested eight to ten weeks after sowing. So if you brought it forward at the beginning of April, you can start harvesting from mid-June.
  • If the Pak Choi shows the first signs of buds, it's high time. Then you should harvest it immediately.

How to harvest

When you are sure that your bok choy is ready to harvest, carefully turn it out of the soil by hand. Make sure that you harvest it with the roots if possible, so it stays fresh longer.

Pak Choi can be stored in the vegetable compartment of the refrigerator for seven to ten days. Clean it roughly of sand and soil and remove brown leaves. Don't wash it before putting it in the fridge! It cannot be frozen raw as it becomes mushy. However, you can easily freeze it cooked, fried or boiled.
