Peaches taste best when they are freshly picked, but few people have peach trees in their own garden. If you want to stock up, the best thing to do is to take advantage of the seasonal offers on the market. You can then use simple means to preserve the juicy fruits at home.
How to can peaches?
To preserve peaches you need preserving jars, water, sugar, vanilla sugar or pod, s alt and spices. The fruits are washed, peeled, stoned and distributed into glasses. The canning stock is heated and poured over it before the jars are closed and boiled in the canner or oven.
How to properly preserve peaches
First you need enough preserving jars, which you should sterilize shortly before preserving. To do this, boil the jars or put them in the oven at 100 degrees for ten minutes. For the stock, prepare water, sugar, vanilla sugar or vanilla pod and a little s alt.
- Wash the peaches under running water.
- Then peel the fruit. First score the peel crosswise and place the peaches in hot water. Then rinse the peaches under cold water. The shell can now be easily removed.
- Halve the peaches and remove the stone.
- If you prefer, you can also divide the peaches into bite-sized pieces.
- Now prepare the preserving stock from water, sugar and the remaining ingredients. You can experiment with the spices to suit your taste.
- Distribute the peach halves or pieces among the glasses.
- Pour the hot broth over it. The fruits must be completely covered.
- Wipe the edge of the glass dry and place or screw on the lid.
The next step is to preserve the jars. The preserving machine or the oven are suitable for this.
In the preserving machine
Do not place the glasses too close together in the kettle and pour water up to half of the glasses. Cook the food for 30 minutes at 75 degrees. However, pay attention to the information provided by the boiler manufacturer. After the end of the cooking time, let the glasses cool down a little in the kettle.
In the oven
Here, place the glasses in the deep drip pan and add about 2 cm of water. Put the tray in the cold oven and heat it to 175 degrees. Watch the glasses. If bubbles rise in the brew, turn off the oven. The glasses then stay in the oven for half an hour
The glasses are removed from the kettle or oven after half an hour and left to cool completely under a cloth on the worktop. Keep your jars cool and dark. Preserved peaches can be kept for several months.
