Red and juicy, they simply belong to summer: cherries. The crunchy fruits contain lots of vitamins but very few calories. Not only can they be made into cakes, they can do much more, as our recipes below show.
What unusual cherry recipes are there?
Try cherry chutney, an aromatic accompaniment to goat or sheep's cheese and grilled dishes, or hearty cherry jam with rosemary, which tastes delicious with steaks, braised dishes and on fresh white bread.
Cherry Chutney
This aromatic chutney tastes great with goat or sheep cheese. We also find the combination with grilled food extremely tasty.
Ingredients:
- 500 g cherries
- 50 grams of brown sugar
- 1 thumb-sized piece of ginger
- 3 tbsp balsamic bianco
- 1 tsp cinnamon
- black pepper from the mill
Preparation:
- Wash and pit the cherries.
- Pour into a pot, add sugar and bring to the boil.
- Chop ginger finely and add.
- Season with vinegar, cinnamon and pepper.
- Simmer until thick while stirring. The cherries should have broken down and only contain a little liquid.
- Stir continuously as the mixture burns easily.
- Pour into clean jars, close and turn upside down until the chutney has cooled.
Savory cherry jam with rosemary
This is an unusual accompaniment to steaks or stews. This hearty jam also tastes extremely delicious on fresh white bread.
Ingredients:
- 500 g fully ripe sweet cherries
- 250 g preserving sugar 2:1
- 2 – 3 fresh rosemary sprigs, leaves picked off
- ½ organic lemon
- Balsamico bianco
- Fleur de Sel (substitute table s alt)
Preparation
- Wash and pit cherries
- Zest from the lemon peel and squeeze the fruit.
- Put the cherries with the rosemary leaves, lemon zest and juice in the blender or food processor with the cooking function.
- Mash everything until smooth.
- If necessary, pour the cherry puree into a pot.
- Add preserving sugar and mix in.
- Bring to the boil and simmer for three minutes, stirring constantly or setting the machine to medium speed.
- Do a jelly test. If the jam is still too liquid, continue cooking.
- Taste with a little fleur de sel and balsamic bianco.
- Pour into clean jars, close and turn upside down until the jam has cooled.
Tip
Cherries are also great as a sweet grilled dessert. Simply place on skewers alternating with peach pieces, drizzle with a little honey and briefly place on aluminum foil on the grill.
