Dandelion salad with strawberries

Dandelion is one of those weeds that drives many a gardener to despair. Next time you pull weeds, don't just add the tender leaves to the compost. Combined with strawberries, they can be made into a very aromatic salad.

Ingredients:

  • 150 g young dandelion leaves (alternatively, arugula is suitable)
  • 250 g strawberries
  • 30 g pine nuts
  • 3 tbsp vegetable broth
  • 2 tbsp good olive oil
  • 1 tbsp white balsamic vinegar
  • 2 tsp honey
  • S alt and pepper to taste

Preparation:

  • Wash the dandelion leaves well and cut them in half.
  • Clean, rinse and quarter the strawberries.
  • Roast the pine nuts briefly in a pan over medium heat and without fat.
  • Pour the broth, oil, vinegar, honey, s alt and pepper into a tall container and use the hand blender to make a dressing.
  • Drizzle over the salad and garnish with the pine nuts.

Strawberry Gazpacho

Gazpacho is a soup from Andalusia that originally uses uncooked vegetables. We prepare this wonderfully refreshing dish with fresh strawberries on hot days, giving it a whole new touch.

Ingredients:

  • 500 g tomatoes
  • 250 g strawberries
  • 150 g cucumber
  • 1 onion
  • 3 tbsp tomato paste
  • 100 ml very cold water
  • 1 tsp honey
  • 1 tbsp balsamic vinegar
  • S alt and pepper to taste
  • Basil leaves

Preparation:

  • Wash vegetables and strawberries.
  • Roughly chop the tomatoes and cucumber, clean and chop the strawberries.
  • Peel and dice the onion.
  • Put the tomatoes, cucumber, strawberries and the onion with the tomato paste and olive oil in a tall container and puree finely with the hand blender.
  • Add water little by little until the soup is thick.
  • Season with honey, balsamic vinegar, s alt and pepper.
  • Refrigerate for at least two hours.
