Wonderfully sweet and fruity, strawberries are the favorite fruit of many Germans. The power fruits taste fresh, but can also be preserved easily by freezing. A special treat is frozen strawberry puree, which goes great with sweet dishes such as pancakes or dumplings.

How do you freeze strawberry puree correctly?

To freeze strawberry puree, puree fresh strawberries, mix them with lemon juice and sugar, and place in portions in an ice cube tray or flat freezer bag. Frozen strawberry puree can be served well with sweet dishes.

Make strawberry jam

Always use fruit that is in perfect condition and has no bruises, as strawberries spoil quickly when pureed, even at sub-zero temperatures.

Ingredients for 4 servings

  • 500 g strawberries, weighed cleaned
  • 3 tbsp lemon juice
  • 1 tbsp sugar

Preparation

  1. Mash the washed and dry strawberries finely with the hand blender.
  2. Add lemon juice and sugar, mix briefly again.
  3. Taste and sweeten a little if desired.
  4. If the small seeds bother you, you can strain the strawberry puree through a sieve before freezing.

Freeze strawberry puree

It is particularly practical if the strawberry puree can be removed in portions. So put it in an ice cube tray and freeze it.

Alternatively, you can pour the puree into a freezer bag and close it tightly. Spread evenly into a thin plate, you can break off the frozen puree in small pieces.

Frozen whole strawberries

If you want to freeze the fruit, two steps are required:

  1. Wash the strawberries, remove the stems and pat dry carefully with kitchen paper.
  2. Place them individually on a tray and place in the freezer for two hours.
  3. Pour pre-frozen strawberries into freezer containers and freeze.

Unfortunately, the fruits lose their crunch when defrosted in the microwave or refrigerator. This is due to the high water content. When the liquid in the strawberries freezes, it also expands and tears the cell walls. When thawed again, the structure of the fruit is therefore quite soft.

If you want to use frozen berries as a cake topping, you should use them frozen if possible. For strawberry cake, simply place the fruit on the base and pour the hot cake icing over it. Since the icing solidifies more quickly due to the cold, the strawberries remain relatively firm to the bite.

Tip

Do not throw away the plucked strawberry leaves. When brewed with hot water, they make a very tasty tea. You can also grind the greens with a mortar and add them to summer salads after cooking them in a pan with a little white balsamic vinegar.
