Sage is a popular spice that gives a characteristic touch, especially to Mediterranean dishes. When processed into sage butter, you can freeze the herb wonderfully and always have the required amount, perfectly portioned, on hand.

How can you freeze sage butter and how long does it last?

Sage butter can be easily frozen by portioning it in aluminum foil, ice cube trays, or in small dollops. Frozen sage butter will keep in the freezer for up to six months.

Prepare sage butter

Ingredients:

  • 1 handful of sage leaves
  • 250 g butter
  • 1 small garlic clove
  • Pepper and s alt to taste

Preparation:

  1. Wash the sage and spin dry.
  2. Chop finely.
  3. Melt the butter in a saucepan.
  4. Add sage and season with s alt and pepper.
  5. Put the garlic through the press and mix in.
  6. Heat the butter until it starts to brown.
  7. Pull the sage butter from the plate and let it cool slightly.
  8. Warm on the lowest setting for another five to ten minutes so that the aroma of the sage is transferred well into the butter.

You can also use vegan butter alternatives for this recipe. However, you should make sure that the spreadable fat used in the packaging is relatively hard, otherwise the sage butter will not solidify.

Freeze sage butter

As soon as the herb butter has reached a certain firmness, you can portion it. There are different options for this:

  • If you need larger quantities, for example for a barbecue, put the butter on aluminum foil and form a roll. Twist the ends well, label them and place them in the freezer.
  • Spread the sage butter in portions into the compartments of an ice cube maker. Once hardened by freezing, the sage butter can be removed in individual portions.

If you mainly only need a few drops of sage butter, which you would like to add to a steak, for example, proceed as follows:

  1. Wait until the sage butter is relatively solid.
  2. Form small blobs with a teaspoon.
  3. Place them in a shallow freezer container with some space between them.
  4. Freezing.

Frozen sage butter will keep in the freezer for up to six months.

Tip

If you don't want to process all of the sage into butter, you can pour the chopped leaves into the compartments of an ice cube maker in portions. Add some water or oil and freeze the sage. You can add the frozen cubes directly to the food.
