The popular and he althy garlic can easily be cultivated in the garden or in the flower box on the balcony. In autumn there is a lot of garlic, which you can wonderfully preserve in small twist-off jars.
How to can garlic?
To cann garlic, prepare, peel and cook the garlic cloves, then place them in sterilized jars. Fill the jars with either a vinegar broth or rapeseed oil and close them. Cook the jars at 90 degrees for 30 minutes.
Prepare the garlic for the jar
- Divide the tubers into individual cloves and peel them.
- Toes with rotten spots are sorted out.
- Boil the garlic cloves in s alted water for 5 minutes.
- Take out the tubers and drain them.
Garlic in vinegar
Once the garlic cloves have been drained, they can be placed in sterilized jars. You can sterilize the jars and lids beforehand by boiling water or heating them (100 degrees) in the oven.
You can use your toes to cook down various spices at the same time, for example small chili peppers or herbs such as rosemary, oregano or a bay leaf. Once you've filled the jars, prepare a decoction of vinegar, water, s alt and sugar. Bring the whole thing to the boil and pour the hot liquid over the garlic cloves. Close the jars immediately and turn them upside down for a few minutes. This creates a vacuum that preserves the garlic.
Garlic in oil
If you pickle garlic in oil, you not only preserve the spicy cloves, you also get delicious garlic oil.
- Here, too, first sterilize the jars and lids that you want to use for preserving.
- Take the prepared garlic cloves and confit them in plenty of rapeseed oil. When confiting, let the cloves simmer in oil over medium heat until almost cooked. The garlic should still be al dente.
- Then put the garlic with the oil into the prepared jars and close them.
- Cook the jars again in the oven or automatic preserver. To do this, place the jars in the drip pan of the oven or in the kettle, pour water (the jars should be well in the water) and cook the garlic at 90 degrees for about 30 minutes.
- Let the glasses cool down a little in the oven or kettle. Then remove the jars and cover them with a cloth to cool completely on the counter.
