Green beans are ready to harvest about three months after sowing. You can tell this because the vegetables that have been broken apart have a juicy, smooth break and the seeds are not yet larger than one centimeter. If they are well ventilated, beans will only last about two days in the refrigerator. It is therefore advisable to preserve the nutritious legumes by preserving them.

How to preserve green beans?

To preserve green beans, you can either freeze them or cook them sourly. When frozen, the color, taste and ingredients are preserved, while boiled sour beans are ideal for stews or salads.

Freeze beans

When you freeze vegetables, most of the color, taste and ingredients are retained. In this way, the crunchy vegetables last for around ten months.

  • Wash the beans until green, cut off the stem and tip and pull off any thread.
  • Bring water to the boil in a pot and add s alt.
  • Fill a large bowl with ice-cold water.
  • After about three minutes of cooking, remove the beans with a slotted spoon and add them directly to the cold water.
  • Pat well dry, pour into freezer bags in portions and seal airtight. Alternatively, tightly closing food storage containers are suitable.
  • Write the date on the frozen food to avoid overlaying.

Green beans, boiled sour

Our grandmothers used to preserve vegetables this way. It is the perfect basis for winter dishes such as bean stew or bean salad.

For two to three glasses you need:

  • 1 kilo of green beans
  • 2 onions
  • 125 ml herbal vinegar
  • 500 ml water
  • Canning spice
  • Dill and savory
  • S alt

Preparation:

  • Wash and clean the beans.
  • Bring water to the boil, add s alt and cook the vegetables until al dente.
  • Holden in ice-cold water and pour into the glasses.
  • Peel the onions and cut into fine rings.
  • Bring 500 ml of water to the boil.
  • Let the onions, vinegar, spice mixture and herbs steep for about a minute.
  • Cover the green beans with the stock and close the jars.
  • Fill a large baking dish with water and place the preserving jars in it. These must not touch the edge of the container.
  • Boil the beans in the oven at 175 degrees for about two hours and let them cool under a tea towel.

Tip

Glasses with swing tops and rubber rings or traditional mason jars are suitable for preserving. Work very cleanly and sterilize the containers in advance so that no food-spoiling germs and bacteria remain in the jars.
