Corn is one of the most popular vegetables and even children love the slightly sweet taste of the grains. Caring for sweet corn is straightforward, which is why the vegetable can be grown in almost any garden. Since the cobs ripen almost at the same time, you usually have a surplus that you can easily preserve by boiling it down.

How can I properly preserve corn?

To cook corn, first remove the kernels from the cob and blanch them in water with a pinch of sugar. Then fill the grains into sterilized jars, add another pinch of sugar and pour in the hot cooking water. Close the jars and cook them in the preserving pot at 100 degrees for 45 minutes.

Pre-cook corn

Ingredients:

  • corn on the cob
  • Water
  • 1 pinch of sugar

Preparation

First the corn kernels have to be removed from the cob:

  1. Remove peel and threads.
  2. Break the corn cob in half.
  3. Place the resulting flat surface on a kitchen board.
  4. Run the knife very close to the cob and cut off the grains.
  5. Put in a bowl and wash.
  6. Any remains of the corn beard float to the top and can be skimmed off.
  7. Fill a saucepan with water and add a pinch of sugar.
  8. Bring to the boil and cook the corn for five minutes.

Occasionally it is recommended to cook the corn in s alted water. However, this poses the risk that the grains will remain hard. That's why we don't add this seasoning.

Cooking corn

First sterilize the jars. Suitable for canning are:

  • Mason jars with rubber ring, lid and metal clip,
  • Jars in which the lid with a rubber ring is attached to the jar using a wire bracket,
  • Twist-off jars with intact seal.
  • Pour the blanched corn kernels into the jars using a ladle and a wide-opening funnel. Depending on the size of the glass, there should be a rim about two centimeters wide at the top.
  • Add a pinch of sugar.
  • Pour in the hot cooking water. The corn kernels must be completely covered with liquid.
  • Close jars.
  • Place the preserving grid on the bottom of the preserving pot.
  • Put the food in it. The glasses should not touch each other.
  • Pour water according to the manufacturer's instructions.
  • Soak at 100 degrees for 45 minutes.
  • Remove from the pot and let cool.
  • Check whether a vacuum has formed in all glasses. Store in a cool, dark place.
  • Tip

    Small corn cobs can be pickled like pickled gherkins. These go wonderfully with a cold dinner. They also add an interesting touch to warm dishes.
