Mandarins are a typical winter fruit that is mostly eaten fresh. The pickled citrus fruits are a great accompaniment to crepes or vanilla ice cream. They are also very suitable as a last minute gift for loved ones who appreciate homemade speci alties.

How to pickle tangerines?

To pickle tangerines, boil water, sugar and alcohol, add spices, peel and quarter the tangerines, place them in sterilized twist-off jars and pour the heated syrup over them. Let everything sit in the fridge for at least two days.

Ingredients for 4 twist-off glasses of 250 ml each

  • 15 small, firm tangerines without seeds
  • 250 g sugar
  • 300 ml water
  • 150 ml rum or cognac
  • 6 cardamom pods
  • 1 vanilla bean

Preparation

  1. Put water, sugar and alcohol in a pot and bring to the boil.
  2. Stir constantly until the crystals have dissolved.
  3. Crack the cardamom pods with the back of a knife and scrape out the vanilla pod.
  4. Add spices to the alcohol-water mixture and remove the pot from the heat.
  5. Peel the mandarins and place them in cold water.
  6. Now the white skin can be easily scraped off with a knife.
  7. Pat citrus fruits thoroughly dry with kitchen paper.
  8. Quarter the mandarins and remove any seeds.
  9. Distribute among the previously sterilized jars.
  10. Heat the steeped syrup again and immediately pour it over the fruit.
  11. Close the jars and let them sit in the fridge for at least two days.

Optional: Cook pickled tangerines

If you don't want to use the tangerines immediately, we recommend boiling the fruit additionally.

  1. Place the jars with the citrus fruits in a drip pan. They are not allowed to touch each other.
  2. Pour two to three centimeters of water.
  3. Place in the oven on the lowest rack and turn on a temperature of 100 degrees.
  4. Once the temperature has been reached, cook for 30 minutes.
  5. Turn off the pipe, remove the tangerines and let them cool completely.

Of course, you can also preserve the fruits in the preserving pot. To do this, place the jars on the rack, pour water according to the manufacturer's instructions and cook the pickled tangerines for 30 minutes at 100 degrees.

Tip

After enjoying the well-infused citrus fruits, you don't have to pour away the high-proof syrup. Serve this, mixed with a little butter, as a creamy sauce for winter desserts.
