Truffles are mostly underground mushrooms that are so rare that a truffle hunter with a dog will only find a few of these delicacies in a day. This makes them an expensive delicacy that is not always available for purchase. You can preserve truffles by drying them and thus make them last longer without affecting the taste too much.

How to dry truffles?

To dry truffles, place the mushrooms in an airy, shady place and cover them with a dark cloth. Change the cloth daily and turn the mushroom to prevent mold growth. Drying takes between four and eight days.

Store truffles properly

Once harvested, the mushrooms gradually lose their aroma due to oxidation. The higher the temperature, the faster this happens. That's why you should always store truffles in a cool, dark and dry place, if possible in the original packaging. The coldest area of the refrigerator is ideal.

Dry truffles yourself

Truffles can be dried very well and can be kept for many months:

  1. Place the mushrooms on a plate and cover the delicacy with a dark-colored tea towel.
  2. Place the truffles in an airy, shady place.
  3. Change the towel every day and turn the mushroom so that it does not start to mold.
  4. It takes between four and eight days to dry.

Drying with silica gel

Drying truffles is much easier if you use silica gel:

  1. Use a tightly fitting container in which you place a small raised area, such as an upturned bowl.
  2. Sprinkle a fine layer of silica gel into the can, but not on the raised area.
  3. Put the truffles on the riser and put everything in the fridge.
  4. Replace wet gel regularly until the fungus dries.

Vacuum seal dried truffles

The completely dried mushrooms are then packed airtight using a vacuum sealer. In this way, stored in a cool, dark place, they will last for about a year.

Tip

The dried truffles can be easily frozen. Place the delicacy in portions in plastic wrap, vacuum seal it and place the mushrooms in the freezer. Preserved in this way, the speci alty lasts for several years.
